Mussini’s secrets: how the king of vinegar is crafted
True balsamic vinegar is made from a reduction of pressed late harvested white Trebbiano and Lambrusco grapes. The resulting thick syrup is then aged for at least 12 years. Over time, it becomes more intense and concentrated, almost black, as it is decanted into increasingly smaller casks made of different woods: chestnut, cherry, oak, mulberry, ash and juniper.
