Genuine, aged balsamic vinegar of Modena
Augusto C. Malpighi (1885 – 1972) described the taste and the aroma of this balsamic vinegar as “the best reward of time and the best gift from the heart”. You’ll understand what he meant when you try it. Crafted to time honoured traditions and aged over generations, it truly is the ‘black gold’ of the Modena region: a rich, glossy, velvety syrup with an indescribably complex umami flavour. One drop of authentic balsamic vinegar can transform a dish. Drizzle it over vegetables, meats, risottos, strawberries, or even icecream (honestly).
Authentic, traditional balsamic vinegar of Modena is not to be confused with the so-called “balsamic vinegar of Modena” that you find on supermarket shelves – the real thing is harder to find.
How the king of vinegar is crafted
True balsamic vinegar is made from a reduction of pressed late harvested white Trebbiano and Lambrusco grapes. The resulting thick syrup is then aged for at least 12 years. Over time, it becomes more intense and concentrated, almost black, as it is decanted into increasingly smaller casks made of different woods: chestnut, cherry, oak, mulberry, ash and juniper.

“You can tell from the complex flavour and rich viscosity of Malpighi vinegar that it’s a top shelf, premium quality product. Divine.”
Balsamic vinegar has been made in Modena for over 500 years, following traditional methods handed down through the generations. The Malpighi family have been proudly making balsamic vinegar since 1850.
